Author's Cuisine @Preludio

Preludio - the restaurant is located at 3rd floor of Fraser Tower, Cecil Street.

This year is Chapter 3: Two Roads.
Diners are given a choice between two roads - Capture or Release.
We chose Capture. We will try Release next time.
Starts with bread and butter.
CAPTURE: SMOKE, MOREL & BUTTER
  • Smoked Caviar, Japanese Cucumber, Blini, Yoghurt
  • Morel, Broccolini, Spiced Rub, Preserved Amalfi Lemon
  • Butter, Oyster Leaf, Black Truffle

HARMONY
Venison, Eggplant, Tomato and Caviar with 25 years old vinegar

WAVES LAPPING ON THE SHORE
Sea Urchin, Chervil Root, Consommé
THE ONE NOODLE
3.5m Chitarre Pasta, Brittany Blue Lobster, Iberico Ham, Parmesan, Scallions

ONE THREAD AT A TIME
Turbot, Cauliflower, Saffron, Lemon Balm, Oudard Pear
CRIMSON
Wagyu Beef, Mustard, Quinoa, Almonds, Red Wine, Parsnip

Sorbet with raspberry (not in menu) to cleanse our palate before desserts were served.

BREAKFAST
Lime, Mango, Passionfruit, Coconut, White Chocolate, and Toast

LECHE
White Chocolate, Earl Grey, Milk, Cereal

Birthday girl get the change to whack a semi circle ball (made of white chocolate) which was tied on a string with a spoon. Surprised! There were jelly beans inside.
Complementary desserts - dried citrus, chocolates, mini chocolate cakes. 

Verdict: Extraordinary. 
Everything was prepared with great care and attention to detail.
At the end of our dinner, we were presented a red envelope containing the menu card with all dishes listed in detail. A nice touch.

Damaged: 600++ for two pax. Including two glasses of sparkling champagne and a glass of rosé.
