Author's Cuisine @Preludio II

Preludio @Fraser Tower
 
After having Capture  last month, we're going for Release this round.
 
RELEASE: BEET, FOIE & MUSHROOM
  • Beetroot, Oxtail
  • Foie Gras, White Chocholate, Basil, Passionfruit
  • Mushroom, Lobster, Porcini, Potato
  
MILLE-FEUILLES DE VOLAILLE
Feuille de Brick, Caviar, Rice
(It was fun playing with the foldable soft metallic (zinc?) plate.)

 
34 HOURS AND 2 STOPS
Jackfruit, Avocado, Chilli, Chocolate
(One of my favourite. The jackfruit was soft and sweet, when dipped with the chocolate sauce that was mixed with 4 different types of hydrated chillies, it tasted so rich and full of flavour - sweet and sour with a tint of spiciness.)


WHAT'S UP, DOC?
Rabbit, Bacon, Tomato, Garlic, Thyme

 
FIRE IN THE WATER
Patagonian Toothfish, Butternut squash, Edamame, Amalfi Lemon, N'duja
(The lobster gravy is super tasty.)

 
PRESSURE
Veal, Pickled Pearl Onion, Mustard, Mascarpone, Polenta

Sorbet to cleanse our palate before desserts.

 
CHLOROPHYLL 
Edamame, Lime, Mint, Basil, Fennel, Green Apple
(Another favourite. Green with a mix of sweet sourness that somehow it felt so refreshing.)

 
CACAO
Cocoa, Miso, Chocolate, Praline, Milk, Cocoa Tea
(One more favourite. The cocoa ice-cream was definitely delicious. But to me, the cocoa tea was more interesting. Inside the glass tube infuser (Simple Lab Experience)  was not cocoa beans but the skin of cocoa fruit. Once hot water was poured in the borosilicate glass, the cocoa aroma smelt so good whereas the tea itself was light and surprisingly soothing.)

Same as previous round, complementary desserts were served.
Damaged: 660+ for two pax. Including two glasses of rosé and a glass of red wine.
